Chocolate Cherry Meringue
Sweet-Antioxidant Rich-Low Calorie
In the food pantry box I received this week, I was given a massive bag of dried cherries. I knew I wanted to make a dessert, but know that cherries are surprisingly tart. Normally, the tartness of cherries is simply remedied by the addition of sugar, but with trying to stick to a low sugar diet, that wasn't an option.
To complicate matters more, I had 18 egg whites leftover from the healthy hollandaise recipe we made last Thursday. But I realized quickly that I could make pavlovas or meringues with the egg whites which are usually sweet in nature to help balance out the tartness of the cherries.
The addition of chocolate to this dish was out of personal preference. Cherries and chocolate is a delightful combo that is rich and can be a health-ier option. Both dark chocolate and cherries are full of antioxidants and other beneficial micronutrients.

Cherry Chocolate Meringues
Meringue Ingredients
- 2 egg whites
- 1/4 tsp cream of tartar
- 1/2 cup sugar free powdered sugar
- 1 tsp vanilla
- 1/2 cup dark chocolate, melted
Sauce Ingredients
- 1 cup dried cherries
- 1 cup water
- 1tsp vanilla
- 1/4 tsp accent, flavor enhancer
Directions
Meringue
- Preheat the oven to 220 degrees.
- Add the egg whites to the bowl of a stand mixer with the beater attachment.
- On a medium high speed begin whipping the whites.
- Add in the cream of tartar and vanilla.
- As the mixture continues whipping, slowly add the powdered sugar.
- Let the whites whip until a stiff peak forms.
- On a parchment lined baking sheet, dollop about two tablespoons worth of meringue onto the sheet with one inch of space between each dollop.
- With the melted chocolate (microwave or double broil to melt), sprinkle it over the meringue dollops.
- Place the tray in the oven and cook for about 45 minutes.
- Once they're done cooking, set them on the counter to cool completely before serving or storing them. Meringue is best served fresh. If you should store them, make sure they're in a very dry and air tight container.
Sauce
- In a saucepot, add the cherries, water, and accent. Bring the mixture to a boil.
- Drop the pan down to a heavy simmer and let the cherries cook down for at least thirty minutes.
- Once the cherries have finished cooking, blend them until the sauce becomes as smooth as possible.
- Drizzle the sauce over the chocolate meringues.
