Healthy Carrot Cake Cookies

Low Calorie - Natural Sugars - Sweet

I don't know about any of you, but I love a sweet treat and these healthy carrot cake cookies are no exception! They contain healthy complex carbs, natural sugars, and a vegetable. Can a dessert get better than that? 

This particular recipe is based off of Amy's Healthy Baking. Check out her website to see the original! In the batch handed out for our second Food Is Medicine class, I used unsalted butter.

Healthy Carrot Cake Cookies
Ingredients
  • 0.12 tsp, Salt
  • 1.50 tsp, Baking Powder 1/2 Tsp
  • 0.75 cup, Whole Wheat Flour
  • 0.75 cup, Grated Carrot
  • 1 tsp, Vanilla extract
  • 0.50 cup, Maple syrup
  • 1.50 tsp (2.6 g), Ground Cinnamon (tsp)
  • 1 egg, Egg
  • 2 tablespoon, Butter, unsalted
  • 1 cup, Oatmeal
Directions
  • Wash the carrots and cut the ends off. Shred the carrot on a fine grater.
  • Mix the dry ingredients in one bowl and the wet ingredients in another. 
  • Slowly add the dry ingredients to the wet ingredients taking the time to full incorporate it before adding more. 
  • Fold in the carrots. 
  • Rest the dough in the fridge for thrity minutes. 
  • Preheat your oven to 325 degrees. 
  • On a parchment lined baking sheet, roll out 12 cookies and place them about 1.5 inches apart. Slightly flatten the cookies to shape them. 
  • Bake for about 11 minutes. The cookies should not be completed cooked when you pull them out of the oven as they will carry over cook sitting on the hot tray. If you leave them in the oven longer, they will be dense, crumbly, and dry. 
  • Serve warm or cool completely and store in an airtight container.
