Grilled Cheese Recipes

Happy National Grilled Cheese Sandwich Day! While there's no questioning that it can be nice to have the occasional, comforting grilled cheese, you can easily add nutrition and flavor to it. Check out these recipes listed below to bump up your Grilled Cheese Game!

Supreme Grilled Cheese

Recipe from Ohio State University Extension

Ingredients:

  • 1 cup peppers - red, yellow or green (about 1 medium pepper)
  • ½ onion
  • 4 slices whole wheat bread
  • 2 tablespoons light mayo or salad dressing
  • ⅛ teaspoon garlic powder
  • 1 cup spinach leaves
  • 4 slices mozzarella cheese

Directions:

  1. Wash hands with soap and water. To wash produce, gently rub produce under cold running water. Slice onion and pepper very thin.
  2. Lay out 4 slices of bread and spread with mayo.
  3. Sprinkle lightly with garlic powder.
  4. Add in layers: the spinach leaves, peppers, onions and slice of cheese.
  5. Heat skillet to medium low. Spray with non-stick spray.
  6. Lay sandwiches in pan. Cover with plate, lid or aluminum foil. Heat sandwiches until cheese mets (about 2-3 minutes) or until the bottom is golden brown. Serve warm.

 

Apple Grilled Cheese

Recipe from the Kentucky Nutrition Education Program

Ingredients:

  • 2 teaspoons butter
  • 4 slices whole wheat bread
  • 2 slices American or cheddar cheese
  • ½ cup spinach
  • 1 teaspoon honey
  • 1 apple, cored and thinly sliced

Directions:

  1. Place a medium skillet over medium heat. Butter one side of each slice of bread.
  2. Place one slice of bread in skillet, buttered side down. Top with two slices of cheese and 3-4 pieces of spinach. Drizzle with honey. Place 2-3 apple slices on sandwich.
  3. Top sandwich with other slice of bread, butter side up. Cook for 2-3 minutes, or until golden brown and flip.
  4. Repeat for next sandwich or if your skillet is large enough, you can do two at a time.

 

Grilled Cheese Surprise

Recipe from the Alabama Cooperative Extension System

Ingredients:

  • Butter, softened
  • 8 slices of whole wheat bread
  • 4 slices of cheese
  • 2 tomatoes, sliced
  • Spinach leaves

Directions:

  1. Spread butter on one side of each slice of bread.
  2. Place 4 slices of bread, buttered side down, in skillet. Top with cheese, tomato, and spinach. Put another slice of buttered bread, buttered side up, on top to complete the 4 sandwiches. 
  3. Cook over medium heat for 2 minutes. Flip each sandwich over to toast the other side.
