Oven-roasted Radishes with Peas

1 bunch radishes (approximately 10 radishes — washed, trimmed and cut into quarters)
2 teaspoons vegetable oil
1⁄4 teaspoon salt
1⁄4 teaspoon pepper
1 cup peas (fresh, thawed from frozen, or canned and then drained)
1 tablespoon lemon juice
1 teaspoon dried dill (optional)


  1. Heat oven to 450°F.
  2. In a rimmed baking sheet, mix radishes with oil, salt, and pepper.
  3. Place baking sheet in oven and roast for 10 minutes.
  4. Remove baking sheet from oven, and sprinkle peas over the radish mixture. Return the baking sheet to the oven and roast just until peas are heated through.
  5. Remove from oven and sprinkle with lemon juice and (if desired) dill.
  6. Refrigerate leftovers within 2 hours.

Quick Tips

You can freeze extra lemon juice to use later.
