Grapes and Grains

This is a great chilled side dish with plenty of color and crunch.

2 tablespoons olive oil (or vegetable oil)
2 tablespoons lemon juice
1 tablespoon orange juice
2 cups cooked barley (do not overcook)
1 1/2 cups seedless grapes or halved, seeded grapes
1/2 cup sliced celery
1/4 cup sliced green onion
1/8 teaspoon salt
1/8 teaspoon pepper


  1. Cook barley according to package instructions.

  2. In mixing bowl, whisk together the oil, lemon juice, and orange juice.

  3. Add barley, grapes, celery, and onions to the bowl and toss until coated. Season with salt and pepper.

  4. Chill until serving time.
