Heat oven to 325°F.
Place pumpkin cubes on a baking sheet and sprinkle with the sugar and salt.
Cover baking sheet with aluminum foil and bake until soft (about 30-35 minutes).
Remove pumpkin from oven, sprinkle with cinnamon, and serve.
One pound of fresh pumpkin yields about 4 cups of peeled and cubed raw pumpkin or 1 cup of mashed or pureed pumpkin.
