Baked Pumpkin

Have a small leftover uncut pumpkin on your porch? Bake it with some cinnamon to spice up your meal.

Ingredients

1 small pumpkin (peeled and cut into cubes)
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon

Directions

  1. Heat oven to 325°F.

  2. Place pumpkin cubes on a baking sheet and sprinkle with the sugar and salt.

  3. Cover baking sheet with aluminum foil and bake until soft (about 30-35 minutes).

  4. Remove pumpkin from oven, sprinkle with cinnamon, and serve.

Quick Tips

One pound of fresh pumpkin yields about 4 cups of peeled and cubed raw pumpkin or 1 cup of mashed or pureed pumpkin.
