The National Center for Home Food Preservation provides research-based information about canning, freezing, drying, and pickling produce.  The website: www.nchfp.uga.edu also includes recipes that are tested and approved for home food preservation.  The University of Georgia also has a resource book called "So Easy to Preserve" that provides techniques and recipes for safe home food preservation.
